Cheesy Meaty Rigatoni Alfredo

When I got my latest package from Shop Rite, I was SUPER excited to see that it was PASTA.  All kinds of pasta! Bags and bags of the brand new ShopRite Imported Pasta. I was super excited because there are so many things you can do with pasta.  Pasta is a great staple to have in the kitchen because of it’s versatility.   I know I can also create something everyone will like to eat for dinner, including my 13 month old daughter, who’s becoming a picky little eater!

Anyways, where did I come up with this recipe? In my pantry! I just looked for ingredients  I had and threw them together and this dish came out great!

Cheesey Meaty Rigatoni Alfredo

Ingredients:
3 cups dry of ShopRite Imported Organic Pennoni
1 can of tomato paste (mixed with about 1 cup of water)
1 can of alfredo sauce
1 pound of ground beef
1 cup of ricotta cheese
Fresh shredded mozzarella cheese(as much as you would like)
Salt/Pepper, to taste
Fresh Basil, to taste

Directions:
Pre-heat oven to 350. Cook pasta to al dente. Brown ground beef till browned, drain fat. Mix together pasta, ground beef, alfredo sauce, tomato paste, ricotta cheese, salt, pepper and some basil in a large bowl. Place mixture into a baking dish and top with mozzarella cheese and some more basil. Bake for about 20-25 minutes, or until cheese is melted.  Makes about 8 servings.
