Sweet Potato Casserole

Thanksgiving and Christmas are my favorite holidays! There are so many activities going on and family get together’s that I get to cook and bake a lot! I’m always in charge of the sweet potatoes and every year I try to do something different with them! This year I decided to make a sweet potato casserole and let me tell you this is a SWEET casserole. It’s almost like after you finish your meal, you want to plop a big old heaping of this on your plate!

Of course you can eat it with your meal, but it was really great to eat after the meal but before the pie’s!

Ingredients:
4 lbs of sweet potatoes, peeled and diced into small cubes
1 bag of mini marshmellows
1 cup brown sugar packed well
1 1/4 cup of butter
Cinnamon to taste

Directions:
Pre-heat oven to 400 degrees. Grease a baking dish(I used 9×13).  Bring the ptoatoes to a boil until they are soft. Mash them once they are soft.

In a large saucepan, combine butter, brown sugar, cinnamon(a few sprinkles), vanialla, and 2 cups of marshmallows

Stir ptoatoes into sauce, tranfster all to baking dish. Bake for about 30 minutes, with about 10 minutes left, add anohter cup of marshmallows to the top and place back in ove n till the marshmellows start to crisp.
