Roasted Red Pepper Vinaigrette

 I didn’t eat salad until I was 19 years old.  I was one of those picky children who only ate peanut butter sandwiches (with no crust) and grilled cheese.  I used to be turned off to salads because they were cold and I didn’t find creamy dressings appealing.  Somehow I discovered vinaigrettes and my world was changed.  I learned that fresh vegetables didn’t have to be bathed in thick, creamy dressing and an new world of food opportunities opened up.  Now I enjoy light, fresh salads made with romaine, spinach or field greens and loaded with other fresh vegetables.  I’ve also learned that it’s very easy to prepare your own salad dressing.

I’ve been making this Roasted Red Pepper Vinaigrette with ShopRite Imported Roasted Red Peppers for a while now and everyone who tries it enjoys it.  I prefer the ShopRite brand for roasted red peppers because the peppers in the jar are whole, which makes them easier to use and measure in my recipes.   Although they are tender and roasted, they have enough integrity to retain their heartiness when whipped into a vinaigrette.  Even my husband, who is not a major pepper fan, likes this dressing.  It has the delighfully pungent flavor of fresh garlic and balsamic vinegar balanced with the sweetness of roasted red peppers.  Give me a salad with this dressing, fresh tomatoes, and some warm grilled chicken and I’m a happy woman.

I use my mini food processor to whip up this dressing.  If you don’t have a food processor, a blender may do the job.  You could even try dicing up the ingredients by hand and using a wire wisk to mix it all up.  Enjoy!

Roasted Red Pepper Vinaigrette
makes about 1 cup (serves 4)

Ingredients
2 whole ShopRite Imported Roasted Red Peppers
2 cloves garlic
1/3 cup ShopRite Imported Extra Virgin Olive Oil
1/4 cup ShopRite Balsamic Vinegar
salt and pepper, to taste

Place peppers, balsamic vinegar, olive oil and garlic in the bowl of a food processor.  Pulse until well blended.  Add salt and pepper to taste.

Serve immediately with a fresh salad or store in refrigerator up to two days.
