Can I just say that I’m in love. I’m serious. Totally in love. Awhile back ShopRite sent me some Imported Basting Oil and ever since then I have been using it on almost everything in my kitchen. The oil is combined with garlic, thyme and parsley and packed full of flavor. I can guarantee you, you want a bottle of this in your kitchen. It can jazz up everything from vegetables to steak.
The recipe I’m sharing with you today has been one of my favorites so far. Very simple and so full of flavor you will be going back for seconds. Another great thing about this recipe is that it’s completely customizable. If you want to use less salt go for it. More pepper? Sure. Just adjust spices and oil to taste and to how many chicken legs you are planning on roasting.
Roasted Chicken Legs
6 chicken legs
1 tablespoon kosher salt (add less if desired)
2 teaspoons pepper
ShopRite Imported Basting Oil
Preheat oven to 475 degrees.
Dry chicken with paper towel and set aside. In a 8×8 dish combine spices and mix together. Add enough basting oil to create a mixture that is just a little more wet than a paste. You want it to coat and stick to the chicken without being so wet that the herbs and spices drip of the chicken.
Roll the chicken to coat and put onto sided sheet pan. Cook in preheated oven for 40 minutes until skin is crispy and chicken is fully cooked.
Take out of oven, let chicken rest for a few minutes and enjoy!
*A small note about the chicken. The oil might smoke a little while roasting the chicken. This is normal.
