Ring In Spring With ShopRite Almonds

For six weeks every year, my family does not eat meat on Fridays. My husband looks forward to these days, because he’s a big seafood lover, so I indulge him with shrimp and crab and other delicacies. But since a pregnancy induced fish aversion never went away for me, I usually make myself a nice salad instead.  The problem with salad though, is that it doesn’t always fill me up and I’m hungry a couple of hours later.

So I was very pleased to see containers of my favorite nuts, almonds, in my latest box of goodies from ShopRite.  Nuts make a great addition to any salad, and the added protein helps me stay feeling full longer.

Now that spring approaches and berries and other warm weather fruit are starting to appear in the grocery store, this is a great time to make one of my favorite salads.  This dish makes a nice main course if you’re looking to eat light or meat free, or as a nice side to fish or chicken.  You can also add grilled chicken to it!  Enjoy!

Spinach and Fruit Salad with Nuts and Goat Cheese

one bag prewashed spinach
1-2 kiwifruit, peeled and sliced
1 pound strawberries, hulled and sliced
1 pint blueberries
1/2 to 1 cup ShopRite raw almonds, chopped if desired
4 oz goat cheese or feta cheese, crumbled
raspberry vinaigrette salad dressing to taste

In a large bowl, toss spinach and fruit with almonds. Top with goat cheese and drizzle dressing to taste. Serves 4.
