Odds And Ends Pasta Salad

I’m one of those people that finds going to the grocery store relaxing. I enjoy going up and down the aisles, shopping for what I need as well as checking out unadvertised sales. I’m also a big fan of the products that are marked down for quick sale. In ShopRite of Brick, N.J., one the first area I always check is the refrigerated case near the deli, because that’s where they sell the deli ends.

This area is a gold mine. If you’re lucky you can find just about anything from the deli department in there, marked way down. When I’m going to make pasta salad, this is where I get my ingredients. I don’t usually change up my regular pasta salad much, as everyone loves it this way, but you could change it up easily depending on what ingredients you find. Here’s the recipe for my Odds And Ends Pasta Salad. It’s filling, quick and easy to make and works nicely as a meal or appetizer.

INGREDIENTS

  • 1 pound Shoprite pasta (I prefer bow ties but any type of pasta will do.)
  • 1 bottle of your favorite ShopRite dressing or 2 cups ShopRite Olive Oil
  • 1/2 pound ham
  • 1/2 pound salami
  • 1/2 pound American cheese
  • 1 pint grape or cherry tomatoes
  • Italian seasoning (optional)

INSTRUCTIONS

Boil the pasta, adding a little olive oil to the water so it doesn’t stick.

While the pasta is boiling, take your ends and cut them into cubes or chunks.

Cut your grape or cherry tomatoes in half.

Drain the pasta and transfer it to a large bowl.

Pour in your salad dressing and stir. If you prefer you can use ShopRite Olive Oil and add your own seasonings. The benefit of this is you can customize the taste using your own seasonings and it omits the vinegar, something not everyone likes.

Slowly add in your cut ends. I like to add one type of end at a time and mix each time, so everything is well distributed.

Add in your tomatoes.

I like to add Italian seasoning at this point, but it’s optional. You will get flavor from the dressing.

Cover the bowl and chill for 3-4 hours.

This is what the pasta salad looks like when finished.
