There are fewer smells that transport me back to childhood and comfort faster than onions sautéing in butter. So many fond memories- in adulthood and childhood- are formed in the kitchen. Certain recipes and aromas bring about these kind of reminders. The making of soups always make a house feel like a home.
I am a strong believer that soup is a year-round meal, regardless of the season. Many people display a sideways look of curiosity when I say that I plan on cooking grilled cheese and tomato soup for dinner. Soups are just too wonderful to only be contained to one season.
ShopRite’s line of organic stocks (chicken, beef, vegetable) are so affordable and have such a great flavor. I am picky about the quality of stocks that go into soup. They make or break a recipe. These are definitely keepers and a must in the pantry.
This recipe is an adaptation of a delicious tomato soup that my mom makes. It is different than traditional tomato soup, as it sports yummy chunks of tomato. It sticks to the ribs like no other! I know that you will enjoy it as much as I do.
My Mom’s Tomato Soup
Yields 4 to 6 servings
1/2 cup ShopRite Organic Chicken Stock
3 cups tomato juice
2 (15 oz) cans diced tomatoes
3/4 cup white onion, diced
2 tablespoons unsalted butter
1/4 cup half and half
Salt and pepper to taste
1. In a large saucepan, sauté the diced onion in butter over medium heat. Cook until translucent, approximately 3 to 5 minutes.
2. Add diced tomatoes, ShopRite Organic Chicken Stock, and tomato soup. Bring to a boil. Reduce heat and simmer for 10 minutes.
3. Add half and half, and salt and pepper to your liking.
4. Serve and enjoy!!!
