Mini Ravioli Alfredo

My husband and I celebrate our wedding anniversary on March 6th, so we don’t typically make a huge deal out of Valentines Day.  I love cooking a casual, affordable, comfortable dinner at home to celebrate this holiday, so I was thrilled when ShopRite provided me with a $25 gift card to make a Valentines Day dinner at home.  As silly as it sounds, we consider a trip to ShopRite as a weekend date, so we loaded up our cart with the fixings for a good dinner:  fresh ShopRite pasta, steak, thick-cut pork loin chops, chicken, asparagus, romaine lettuce, ShopRite Caesar Salad Dressing and Italian sausage.  My husband joked that pasta isn’t “man food”, so I set out to prove him wrong with our dinner menu.

We opted to cook outdoors on our charcoal grill since the weather was unseasonably warm.  I marinated the meats the night before and I went to work on our pasta side dish while he cooked outdoors on the grill.

I decided to serve ShopRite Mini Ravioli in Alfredo sauce as a side dish instead of as a main course.  It went over well!  We enjoyed a variety of grilled meats, a crisp (easy) salad made with ShopRite Caesar Salad Dressing and freshly grilled chicken, roasted asparagus, and the cheesy, creamy Mini Ravioli in Alfredo Sauce.  We had enough leftovers to pack lunch for work the next day, which is always a great bonus to cooking at home.

The next time you have a special occasion, consider making a great meal at home with affordable ingredients from ShopRite.  Avoid the crowds, have your food your way, and enjoy the leftovers.  Plus, you get to cook a good meal with someone you love.

Mini Ravioli Alfredo
serves 4 as a side dish

1 package ShopRite Mini Ravioli
1/4 cup butter (1/2 stick)
1 cup heavy cream (or milk)
1 clove garlic, crushed
1 1/2 cups grated cheese (I used 1 cup Parmesan and 1 cup white cheddar)
salt and pepper, to taste
chopped Italian parsley, for garnish (optional)

Cook Mini Ravioli according to package directions.  Drain pasta and set aside.

Melt butter in a medium saucepan.  Over medium heat, whisk in cream and garlic and bring to a simmer.  Remove from heat and whisk in cheese until smooth.

Stir pasta into sauce.  Top with parsley.  Serve immediately.
