I have a confession: I don’t always go into the grocery store with a plan. I try to menu plan, make a list of the things I need and then stick to the list.
But you know how it is. One of the kids gets sick or work gets crazy or the basement floods or you’re just too tired. Sometimes I find myself in the store with no idea what I’m making for dinner that week.
Here’s a secret: when I find myself wandering the aisles looking for inspiration, I frequently go down the pasta and sauce aisle and check the packaging for recipes. You don’t need a fancy recipe or a secret ingredient if you use good quality products and a simple recipe. Ever eaten a freshly laided egg? It’s like that.
When I recieved a box of ShopRite’s new specialty imported pastas last week, I was tickled to see that each variety has a recipe printed on the bag, taking a lot of the guess work out of what I’m cooking for dinner this week!
For a family potluck, I used the recipe on the pennoni bag for Pennoni Caprese, which was a huge hit. I came home with an empty bowl! Even better, it was fast and easy.

16 oz ShopRite Imported Organic Pennoni, cooked to package directions
8 oz fresh mozzarella cheese, cut into 1/2 inch cubes
1/2 lb fresh, ripe tomatoes, chopped
4 Tbsp olive oil
1 Tbsp red wine vinegar
salt and pepper to taste
1/2 cup fresh basil leaves, torn
Mix mozzarella, tomatoes, oil and vinegar in a deep bowl. Season to taste with salt and pepper. Cover and let stand at room temperature for about one hour. Add basil and toss well, then stir in the drained pasta. May be served hot or cold. If serving hot, heat the salad in a pot on medium heat until cooked to desired temperature. If serving cold, drain pasta and rinse well with cold water. Serves 6-8.
