Olive oil is a very popular ingredient in my kitchen. There are so many brands (at varying prices) and I’ve tried oils from Spain, Italy and California. ShopRite now produces an Extra Virgin Olive Oil made from California olives. I received a complementary bottle of this oil and it worked well with my recipes. I will continue to purchase this product for my recipes since it tastes great and the price is right for everyday use.
I am particular about olive oils that will be used in recipes with raw ingredients. When the oil isn’t cooked, it really needs to have a pleasing taste or it can hurt the quality of your dips or dressings. This ShopRite Extra Virgin Olive Oil was delicious in my bruschetta, served as a great base for an herbed oil dip for crusty bread and tasted great in my vinaigrettes.
One of my favorite uses for olive oil is in bruschetta. While local tomatoes are at their peak in the summer, you can purchase fresh tomatoes and basil year-round at your local ShopRite and get great results. Here’s my recipe:
1 pound fresh tomatoes, diced (about 5 medium tomatoes)
4 cloves of garlic, minced
1/4 cup of chopped, fresh basil
1/4 cup ShopRite California Extra Virgin Olive Oil
salt and pepper, to taste
crusty bread, for serving
Mix first four ingredients (through olive oil) in a bowl. Add salt and pepper to taste. Refrigerate brushetta for at least an hour before serving. Serve cool brushetta on crusty bread as an appetizer.
