$25 Dinner – Pasta with Langoustine and Artichokes

I’m pretty sure I’m in the minority, but I hate going out to eat on holidays like New Year’s Even and Valentine’s Day. While it always seems like a good idea in theory, restaurants always pack in as many people as they can on those nights, serve a limited (and marked-up) menu, and the quality always seems to suffer. I’d much rather spend the holiday at home with a nice dinner in, and save the restaurant for another night.

Just because you’re staying in doesn’t mean you can’t have a romantic, restaurant-quality meal though! This pasta with langoustine and artichokes would find itself right at home on the menu of the best Italian restaurant in town. Even better, it only takes about 20 minutes to make and costs less than $25 (you might even have a little money left over for a bottle of wine!).

Note: Langoustines are small pin lobsters native to northern Europe. Look for them near the frozen fish. You can also use small shrimp (tails removed) instead.

Serves 2


1/2 box farfalle pasta
2 tablespoons butter, divided
1 shallot, minced
3 cloves garlic, minced
1 teaspoon flour
1 cup Shop Rite White Cooking Wine
1 pinch red pepper flakes
6 ounces artichoke hearts (frozen or packed n water)
6 ounces langoustine tails
1 lemon, zested
1/4 cup fresh basil, chopped
salt and pepper


Bring a large pot of salted water to a boil. Cook the pasta according to the directions on the package. Drain.

While the pasta cooks, melt 1 tablespoon of butter in a large sauté pan. Add the shallot and garlic and cook 2-3 minutes or until soft. Sprinkle with flour and cook 1 minute. Whisk in the cooking wine and bring to a simmer. Add the red pepper fakes, artichoke hearts, and langoustine. Cook until heated through, about 5 minutes. Melt in the remaining butter. Stir in the drained pasta, lemon zest, and basil. Season with salt and pepper.
