Mini Breakfast Quiche

It’s springtime!  The weather is finally warmer, the grass is thick and green, flowers are blooming, and every day I wake up to the sound of birds singing… or rain! 

Last week I recieved a gift card from ShopRite and I decided to treat my family to a special brunch.  This menu is great for Easter Sunday or any morning when you want to treat your family to a meal that goes beyond the typical pancakes or cereal.   I love cooking for my family and this meal was so easy that I had plenty of time to sit and chat with a cup of coffee while we waited for breakfast to hit the table.  I chose quiche because it can pass for breakfast or lunch and it’s easily reheated when people come and go, making it ideal for family gatherings.  I also like anything in a miniature form – it just seems extra special.

I saved time by making these quiche with refrigerated pie crust.  You can absolutely make your own pie crust from scratch, but I was going for simplicity.  I rounded out this meal with sliced fresh strawberries and my favorite Easter pastry, hot cross buns.  I picked up all of the items at my local ShopRite.  I chose to fill my quiche with sausage and cheese, but feel free to use what works for your family whether it’s vegetables, turkey bacon, or just cheese.

 

Mini Breakfast Quiche
2 refrigerated pie crusts
6 eggs
1/2 cup milk
salt and pepper, to taste
1 cup shredded cheese (I used cheddar and parmesan)
1/2 pound cooked breakfast sausage, crumbled
1/4 cup chopped fresh chives, optional

Preheat oven to 400 degrees.

Spray a 12-cup muffin pan with non-stick spray.  Roll out the pie crusts and carefully cut 12 4-inch rounds from the crust.  (A cereal bowl may work well as a template.)  Re-roll the scraps as necessary to make 12 rounds.

Carefully press the pie crust into each muffin tin.  Make sure the crust comes all the way up the sides of each muffin cup.

In a medium bowl, whisk together eggs, milk, a pinch of salt, 1/2 teaspoon pepper, cheese, and chives, if using. 

Place a few bits of sausage in the bottom of each muffin tin.  Pour egg mixture into each muffin tin, filling each cup to about 3/4 full.

Bake quiche for 20-30 minutes or until eggs are set and crust is golden brown.  Carefully remove quiche from muffin tins and serve hot.  Garnish with additional chives, if desired.
