It’s Summertime and the Grilling is Easy

As soon as the warmth of summer arrives, the last thing I want to do after a full day is heat up the kitchen.  It’s just so much more fun to cook dinner out on the grill and enjoy the meal outside, too.

Since I don’t always plan ahead, I was thrilled to have a chance to sample some of ShopRite’s ready-made marinades.  They are so easy to use, and help you get dinner on the table without working up a sweat.

First, I tried the Teriyaki marinade on chicken breasts.  While they were grilling I also  grilled up a combination of onions and mushrooms to serve over salad with the chicken.  The flavor came through with only 15 minutes of marinating time and the vegetables complimented it nicely.  A pefect main dish salad.

Once the chicken is done, slice it up and serve over your favorite salad greens.  We have also enjoyed the chicken served up in tortillas and over rice.  Go with what you have on hand and keep dinner nice and easy this summer!

For dinner on another evening, I tried the Herb and Garlic marinade over chicken.  While that was grilling, I sauteed up a combination of bell peppers and onions.  Served over farfalle pasta, this was another big winner and the leftovers heated up beautifully.
