Pasta is a huge favorite in our house for many reasons: it’s frugal, it’s versatile and it’s something the kids all seem to like no matter how it’s made. This recipe is simple but flavorful and the new ShopRite Imported Pastas are perfect for it. I love Casarecce – it’s a simple extruded S that has perfect little indentations to hold any sauce you’d like and it doesn’t have a lengthy cooking time.
A simple roasting of cherry tomatoes adds tons of flavor here and if you can’t find fresh cherry tomatoes, you can always use ShopRite Imported Whole Cherry Tomatoes in juice - two cans will do – and the flavor will just be that much better.
Casarecce with Sausage and Roasted Tomatoes
Serves 6 – 8
1 pound ShopRite Certified Organic Imported Specialty Casarecce pasta
1/2 cup onion – chopped
1/2 cup fresh basil leaves
3 cloves garlic – minced
2 Tablespoons olive oil
1 1/2 pounds Italian sausages
1 pint cherry tomatoes
1 cup shredded Romano cheese
1/2 teaspoon red pepper flakes
Rinse tomatoes well and dry lightly. Cut in half and lay cut side down in baking pan. Top evenly with onion, garlic and basil leaves. Drizzle with olive oil and sprinkle with salt.(If using ShopRite Imported Whole Cherry Tomatoes in juice, drain juice and continue as directed. Set juice aside to deglaze the roasting pan instead of using stock.)
Roast for 45 minutes, check once to make sure tomatoes aren’t burning at any time.
While tomatoes are roasting, cook sausages as desired until no longer pink in the center.
Cool and slice 1/4″ thick. Slices can be pan fried until browned if desired. Set aside and keep warm.
Cook Casarecce until al dente. Drain and toss with sausage. Keep warm until tomatoes are done.
When tomatoes are roated and slightly browned, remove from pan with a slotted spoon. Stir up any charred bits with liquid left from tomatoes. If there is no liquid left, add 1/4 cup chicken or vegetable stock to roasting pan and stir well.
Pour over pasta with tomatoes, add shredded cheese and toss well before serving.
