I stocked up during ShopRite’s recent 40th annual Can Can Sale, and I especially love beans, so when ShopRite provided the Potluck bloggers with cans of five different kinds of beans and corn, I turned them into the best bean salad I’ve ever had or made. Just added some wheatberries, scallions, ShopRite’s imported from Greece red roasted pepper and a lovely sweet and sour dressing, and I’m full o’ beans!
CanCan Bean Salad
1 can ShopRite Whole Kernel Organic corn
1 can ShopRite Small White Beans
1 can ShopRite Organic Garbanzo Beans
1 can ShopRite Organic Black Beans
1 can ShopRite Roman Beans
1 can ShopRite Organic Light Red Kidney Beans
1 cup dried wheatberries, cooked according to package directions
1/2 cup apple cider vinegar
1/4 cup canola oil
1/2 cup sugar or agave nectar
1 bunch scallions, green ends, chopped
1 roasted red pepper, from jar of ShopRite imported from Greece, chopped
