I’m not a breakfast person. I just don’t like to eat early in the morning and heavy foods make me feel sluggish and slow.
It’s a problem because, as they say, breakfast is the most important meal of the day. I need something in my stomach that will give me the fuel I need to get through the morning but that won’t make me feel icky.
Plus, since mornings tend to be busy in my house, it needs to be something that can be prepared quickly and doesn’t generate a lot of dishes!
I’ve always loved baked apples, but who has time for baking in the morning rush? So this week I tried making this dish in the microwave instead and it came out great! It’s light enough that I don’t feel bogged down and the hint of brown sugar gives me a little kick. Perfect with a glass of milk!
1 medium apple, peeled and cored
ShopRite cinnamon, to taste
ShopRite brown sugar, to taste
Place the apple in a small bowl and add a few Tbsp water. Sprinkle with cinnamon and brown sugar.
Microwave on high for 3 minutes. When cool, you may want to pour off extra liquid. Top with additional brown sugar and cinnamon if desired.
