Have you ever thought to yourself…, “what do people use canned pumpkin for besides pumpkin pie?” I will admit that I have!
I am just really inspired by pumpkin. I love all of the squash relatives (haven’t met one I don’t like), but when it comes to pumpkin, my mind goes blank with what to do with it.
Until I thought of two things that might compliment each other perfectly… PUMPKIN and CREAM CHEESE. Yummy, right? Even better than that … how about making a loaf of bread or muffins to eat for a snack, breakfast or even dessert? You can ask my kids … the idea was a fabulous one!
I found a recipe online and changed it a little … more to my liking and this is what it came out like … delicious, scrumptious, to die for muffins and bread.
Can I let you in on a little secret too? It took me about 10 minutes to mix up the batter and about 20 minutes for the muffins to bake and 50 for the loaf of bread. Are you kidding? My house smelled like a bakery (no complaints there), the kids loved the special Pumpkin Cream Cheese muffin treat and I will be excited to have this Pumpkin Cream Cheese Bread tomorrow for breakfast with my coffee. YUMMY!
P.S. Be glad we don’t have smell-o-vision on here. If we did, you would be trying to leap through the computer screen to grab yourself one of these tasty muffins or pieces of bread! DELICIOUS!
