Clayton’s Organic Beef and Summertime Grilling; Perfect Partners

We’re just gearing up for peak grilling season and one of my favorite things to grill is beef. Good beef is a necessity when grilling and Clayton’s Organic Beef grills up beautifully. I picked up a Clayton’s Organic flank steak this week and tossed it in a lovely lime and garlic marinade before grilling to perfection. I served up our flank steak with warmed flour tortillas and fresh salsa and the beef was a perfectly tender bite and took on the marinade very well.

Once rested and sliced it was flavorful and tender, something I really enjoy in a good cut of beef. The fact that this beef is available only at ShopRite stores makes it even better. I haven’t had a trip to my local ShopRite store that wasn’t a complete joy. In fact, I keep waiting for the day that I’ll be disappointed and it never comes. Not only is every associate there helpful and kind, often going out of their way to help me, there’s nothing I can’t find there and many of my very favorite items are ShopRite’s private label groceries.

Having an organic choice for beef that I trust makes the trip even more worthwhile. Here’s my recipe for marinated flank steak.

Marinated Grilled Flank Steak
Serves 4
1 pound Clayton’s Organic Flank Steak
Juice of 1 lime – abour 1/4 cup
1 clove garlic – minced
1/4 cup chopped fresh cilantro
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon crushed oregano

Combine marinade ingredients in a large bowl.

Add steak and rub marinade all over the meat.

Cover and let marinate for at least 30 minutes.

Heat grill until very hot and wipe marinade from surface of steak.

Add steak to grill and cook for 8-10 minutes per side.

Remove from grill and let rest for 5 minutes before slicing thinly across the grain and serving.
