Chocolate Mallomar Marshmallow Bars

Mallomar cookies are a family favorite of ours. We usually eat them as is but this time we tried baking with them.  If you are looking for Mallomars, ShopRite carries them in the fall and winter months when it’s cool enough outside for them not to melt and every couple of weeks they put them on sale. For those of you who are unaware, they are a graham cracker and marshmallow cookie that is cloaked in chocolate. These bars are ridiculously good, they are rich and gooey. We basically took the Nestle toll house cookie recipe and made it into bars with the addition of cocoa powder, marshmallow cream and chopped up Mallomar cookies.  It was a little bit tricky and messy to put together but completely worth the effort!!


2-1/4 cup Shoprite all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp Shoprite baking soda
1 tsp salt
1 sticks unsalted butter at room temperature
1/2 cup Shoprite Granulated Sugar
1 cup Shoprite Brown Sugar
2 eggs
1 tsp Shoprite Vanilla Extract
1 cup Shoprite Semi-sweet Chocolate Chips
10 mallomar cookies chopped into little pieces
1 jar marshmallow creme

Preheat oven to 350 degrees. In a medium bowl add flour, cocoa powder, baking soda and salt and set aside. In a large bowl of a stand mixer, combine butter and both sugars.  Add eggs one at a time beating after each addition.  Add vanilla and combine. Slowly add dry ingredients to wet ingredients.

Fold in chocolate chips and chopped cookie pieces.  Spread half the dough into a 9 x 13 pan lined with parchment paper.  I put half the dough in the pan and then used my hands to press down the mixture until it was even and spread out.  Next spread the marshmallow creme over the entire dough which I also did with my hands.  And then take the remaining dough and spread over the marshmallow creme.  This also worked well with my hands.

Bake for 28-32 minutes.  Take out of oven and cool before slicing into pieces.  Makes about 24 pieces.

    I made them today and that’s what I found, too the chocolate isn’t nlarey as much as you’d think from the picture. However, I think if it were that much, I might not like them as well. I also probably went too light on the graham crackers, but did get the crust to hold together, though the texture was almost fudgy with graham crumbs throughout.
