Thinking about picking up yogurt the next time you are at your local ShopRite? ShopRite has recently expanded their Greek yogurt line to include three exciting new flavors to their private-label brand: mango, blood orange and apple cinnamon. ShopRite’s fruit on the bottom Greek yogurts are rich, creamy and packed with fruit on the bottom. The 6-ounce yogurt cups are made with all natural ingredients, are fat-free and a great source of calcium.
Nothing goes better with yogurt than fresh, homemade granola. After picking my favorite yogurt flavors I decided to also grab ingredients for some Pecan Pretzel Granola.
PECAN PRETZEL GRANOLA
To prepare the granola you will begin by mixing the following ingredients in a large mixing bowl.
- 3 cups of old fashioned or “large flake” rolled oats
- 1 cup of chopped pecans
- 1 cup 0f broken up pretzel pieces (I used pretzels from the bottom of the bag)
- 3 tablespoons chia seeds
- 1 tablespoon ground flax
- 1/2 tsp sea salt
In a small pot, combine:
- 1/2 cup coconut oil
- 1/2 cup liquid sugar (or honey or agave nectar)
- a splash of vanilla extract
Heat until the coconut oil has melted.
Pour wet ingredients over the dry, and stir.
The photo below represents the granola in its various states: raw ingredients before mixing; mixed ingredients before they are baked and the end result, the baked granola.
Spread granola out on a large parchment-lined cookie sheet and bake in a 300 degree oven for 12-15 minutes or until slightly browned. Cool completely before moving to a tightly sealed glass jar and use to spread over your favorite yogurt.
The Pecan Pretzel Granola paired perfectly with the Apple Cinnamon Geek Yogurt and offers a hearty start to the day. The yogurt and granola are a favorite breakfast of mine and is so delicious. Visit your local ShopRite for a wide variety of yogurts including the new fruit on the bottom Greek yogurts – now in even more satisfying flavors.
Enjoy and let us know, what’s your favorite flavor?
