One of the very best things that ShopRite sells is their Imported Basting Oil made of canola and grapeseed oils infused with garlic, thyme and parsley. The versaitlity of it is enough to make your head spin once you get going. I first used it for the following recipe, a filet of tilapia brushed with it and then crusted in ShopRite almonds, but once I began experimenting, I found the possibilities were deliciously endless.
I sauteed green beans in it, tossed new potatoes in it before roasting, brushed it on flat breads, marinated chicken and mixed it with quality vinegars for fabulous salad dressings. The flavor is so good there was absolutely no need for any extra herbs or spices and I used very little salt with it with excellent results.

Almond Crusted Tilapia
4 tilapia fillets 6 ounces each
2 Tablespoons ShopRite Imported Basting Oil
1/4 cup ShopRite Unsalted Roasted Almonds chopped fine in a food processor
sea salt to taste
Brush fish fillets with basting oil and coat each in chopped almonds. Salt lightly.
Heat a non-stick pan over medium-high heat and add remaining oil to pan.
Saute fillets in oil for 3 – 4 minutes per side, turning carefully so almonds don’t slip off.
